A Journey to Create Australian Jaggery
Driven by a passion for authentic heritage flavours, Arjun Singh traded the urban pace of Melbourne for the tropical landscape of North Queensland in Far North Queensland.
What began as a vision to create authentic jaggery in Australia became a journey of research, experimentation and craftsmanship.
Over two years and 80 meticulous trials, the process was refined to achieve the desired balance of flavour, texture, moisture and natural molasses character.
Today, our jaggery brings together Australian sugarcane, traditional knowledge and modern Australian craftsmanship.
